Introduction

Throw these canned ingredients together to make a tasty Asian soup in no time at all. It has a beautiful spicy warmth to it, it's perfect for fall and winter and packs a fantastic protein punch - 13 grams per serving. Ingredients

    1 can of AROY-D Soupe a la Citronelle (400 ml)
    1 can AROY-D Lite Coconut Milk (400 ml)
    1 can full of water (rinse out coconut milk)
    1 carton of Campbell's Chicken Broth -30% Salt (900ml)
    2 skineless chicken breasts ( 370g raw/ 230 g cooked)
    3 large stalk of celery
    3 tbsp chopped fresh cilantro
    1.25 cups sweet red bell pepper
    128 g of uncooked orzo pasta (this time 142g)

Tips

If the coriander is added while the soup is cooking it will turn a dark olive green - it's flavour and colour are better preserved when added just before serving. Shrimp would also be a beautiful addition to the soup.


Directions

In a large saucepan, pour in the contents of the soup, coconut milk and broth and heat them together (medium heat). Cut the chicken breasts into small pieces and add to the soup. Add the celery and red pepper coarsely chopped. Bring the soup to a very low boil and add the orzo pasta. When pasta is cooked the soup is done. Add coriander before serving.

Serving Size: makes 1750 ml = 7 cups or 7 x 250 ml servings
