Number of Servings: 4

Ingredients

    1/2 cup canned pumpkin
    1/2 cup quick oats
    1/4 cup dry polenta
    1/4 c. artificial sweetener (IMPORTANT: if not using a heat stable baking sweetener, add after removing from heat!)
    1/4 tsp. maple extract
    1-2 tsp. pumpkin pie spice (to taste)
    1 1/2 c. hot water (adjust to desired consistency while cooking)
    1 oz. pecans, chopped and toasted

Tips

Made with real maple syrup: 192 cal/serving.
Made with artificial sweetener + maple extract: 130 cal/serving.

Directions

Combine all except pecans in saucepan. Cook over medium heat, stirring frequently, for about 5 minutes.
Adjust cooking time depending on type of oats.
Adjust amount of water to your preferred consistency.
