Gluten free carrot pineapple oatmeal Muffins

Introduction

We love these muffins. I wrote out the recipe as I made it the first time but I make small changes depending what I have in the house. The goal was some fiber and protein in a quick to grab breakfast. I used becel olive oil margerine but could not find the nutritional value for that so said "butter" in the recipe. You could use apple sauce instead of apple butter etc. They don't have the typcial gluten free texture or taste so no one realizes they are gluten free! We love these muffins. Ingredients

    2 eggs
    .25 cup apple butter
    3 Tbsp oil
    .25 cup butter or margerine melted
    1 tsp. vanilla

    .75 cup gluten free all purpose flour
    .25 cup oats
    4 Tbsp. ground flax seed
    .5 tsp salt
    1 cup grated carrots
    3 Tbsp. chopped pecans
    .5 cup brown sugar
    1 Tbsp. cinnamon
    1 tsp. baking powder
    .5 tsp. baking soda
    .5 cup crushed pineapple


Tips

They freeze well if there are any left. Prep time may increase if you have to grate your own carrots by hand.


Directions

Whisk together eggs, apple butter, oil, margerine and vanilla.

In a large bowl mix remaining dry ingrediants: flour, oats, flax seed, salt, grated carrots, brown sugar, cinnanmon, baking powder, baking soda until blended. Stir in the egg mixture and pineapple until everything is moist.

Spray your muffin tins with non-stick spray.

Bake at 375 for 15-20 moinutes

Serving Size: Make 9 muffins
