8 c diced potato
1 diced large onion
1/4 c butter
3 cups water
4 c low sodium broth
1 pint half and half or cream
1 c instant mash potaoes (for thickening

serve with bacon bits, cheese and green onions - NOT CALCULATED IN RECIPE
Directions
Boil potatoes in water and broth.
Saute onion in butter and add to boiled potatoes
Add half and half
stir and add 1 cup instant potato or to desired thickness
