Lazy Borscht

Introduction

A quick and simple borscht for when you're craving the real thing but don't have time...

A quick and simple borscht for when you're craving the real thing but don't have time...

Number of Servings: 4

Ingredients

    1 15 oz can diced beets
    1 14.5 oz can chicken broth (I used Swanson's 33% less sodium)
    1 package frozen Uszka z Grzybami, (small mushroom pierogi's, optional but included in this recipe for calculation. These can be obtained from a Polish or Eurpoean market. Alternatively you could add sauteed mushrooms for a similar flavor.)

    Pepper, oregano, parsley, basil, dried chopped onion, and/or any other spices you like, to taste.

Directions

Pour entire can of beets (undrained), can of chicken broth, and spices into a medium to large suacepan, bring to boil.

Once boiled , add pierogi, bring back to boil and continue to cook until pierogi are cooked (usually 2-3 minutes, see package for details)

Cooking time varies depending on how long it takes to boil where you live. High altitude etc will take longer.


Serving Size: about 4 cups (recipe is calculated for entire batch)
