Fluffy Pancakes

Introduction

These are the fluffiest gluten, starch, and low carb pancakes. These are the fluffiest gluten, starch, and low carb pancakes.
Number of Servings: 2

Ingredients

    1/4 cup coconut flour
    2 extra large eggs, separated
    1 scoop Jay Robb Vanilla Whey Protein
    1/2 cup unsweetened almond milk
    1 tsp vanilla extract
    1 tsp. baking powder

Tips

You can use a non-stick skillet if you like.


Directions

First, separate whites from yolks. Whip whites until very stiff peaks form. In a small bowl mix yolks and half and half. Add vanilla to this mix.

Whisk dry ingredients until incorporated.

Add a small amount of the whites to the egg yolk mixture. This will keep them from breaking the whites. Cut a hole in the center of the whites. Pour in lightened egg yolk and dry mixture.

Fold very carefully. You will still see some streaks of the whites.

Let rest while the buttered skillet gets hot.

I used a two ounce cookie scoop to ensure equal pancake size.

Takes about three minutes on each side.

Serving Size: 6 four inch pancakes
