Diet Soup

Introduction

Number of Servings: 20

Ingredients

    1 head of cabbage, chopped
    2 cups no fat chicken, beef or veggie stock
    2 cans of diced tomatoes, Italian style (I typically add more because I love tomatoes)
    4 medium onions, chopped
    1 leek, sliced
    1 cup sliced carrots
    4 pieces of celery, diced
    1-2 sweet red peppers
    6 garlic cloves
    1 bag (16 oz) of frozen or fresh green beans
    1 medium zucchini, chopped
    1.5 tsp black pepper
    Salt - to taste
    1 tsp nutmeg
    2 tsp cumin
    5 tbsp italian seasoning - but less or more to taste
    1 can crushed tomatoes or a few tablespoons tomato paste.

Tips

Any low calorie or low GI vegetables can be added. I stay away from corn and potatoes. Use any seasonings you love. I also sometimes add cooked chicken to mine to make it a full meal. I use this soup as a stable in my kitchen and just add fresh veggies, chicken, a salad or some fruit to finish off my meal.


Directions

In a huge pot, add broth, cabbage and diced canned tomatoes. Turn on heat to medium. Add rest of prepared ingredients, top with water to fill pot. Cover and bring to boil, stirring occasionally. Reduce heat to simmer, cook for about an hour. When veggies are done, its ready to serve.

Serving Size: makes approx 20 2 cup servings (depending on size of pot used to cook)
