Mrs. Harvey's White Fruit Cake

Ingredients

    1/2 lb. butter, unsalted
    1 cup white granulated sugar
    5 large eggs
    1 3/4 cups flower
    1/2 tsp. baking powder
    3/4 lb. candied cherries
    1 lb. candied pineapple
    4 cups pecans, chopped
    1/2 oz. vanilla flavoring
    1/2 oz. lemon flavoring

Tips

I baked this recipe in the 5 1/2 mini loaf pans at 250 degrees for 1 1/2 hrs. and it came out just fine.

Makes 6 mini loaves; serving size is 1/6th of a loaf, if a loaf weighs about 309 grams. 1/6th of a loaf has 30.4 grams of carbohydrates.

Total recipe weight: 1854 grams. 1 gram wt. has 0.6 grams carbohydrates.


Directions

Cream butter and sugar.
Add eggs and blend well.
Chop nuts and fruits in medium sized pieces; mix with part of the flour.
Sift remaining flour and baking powder together.
Fold into egg and butter mixture.
Add flavorings, mix well, then add fruit and nuts, mixing well.
Pour into well-greased tube pain.
Place in cold oven and bake at 250 degrees for three (3) hours checking a little before with wooden toothpick.
Cool in pan.

Pan sizes and baking times for fruit cake: 300 degrees
Loaf Pan 9x5x3 -- 2 1/2 hrs.
Loaf Pan 8 1/2 x 4 1/2 x 3 1/2 -- 2 hrs.
Loaf Pan 5 1/2 x 3 x 2 1/2 -- 1 1/2 hrs.

You will want to check on doneness as these times are approximate.
