Introduction

An entire head of cauliflower, blanched and pureed with garlic, herbs, and mushroom seasoning. The ENTIRE thing is around 150 calories with 14 grams of fiber, 12 grams protein, and a crazy amount of potassium. And did I mention, it's low-sodium but doesn't taste like it? Ingredients

    1 whole cauliflower, medium sized
    3 T.fresh flatleaf parlsey, or dried
    2-3 tsp. granulated garlic powder
    2 T. mushroom seasoning (or salt to taste)
    Pepper to taste
    water

Tips

You can find Mushroom Seasoning in any Asian Food market or online. It adds so much flavor but is very low in sodium compared with table salt.


Directions

Chop cauliflower into florets. Cook or blanch until tender.
Drain and add to a blender with the rest of the ingredients. Start with 1/2 cup of water, and add more if needed.

Season to taste.

Enjoy hot!
