Simple Apricot Bar

Introduction

Very easy, do ahead and freeze. Requires no eggs. Very easy, do ahead and freeze. Requires no eggs.
Number of Servings: 36

Ingredients

    2 sticks butter
    1 cup sugar
    2 cups flour
    1 cup finely chopped pecans
    1 (18 oz.) jar apricot preserves

Tips

Avoid spreading to edge of pan to avoid burning. Freezes well.


Directions

Cream butter and sugar. Add flour and mix until crumbly. Add pecans. Reservice about 1 3/4 cups of mixture. Press remaining mixture in a 10 x 15 inch pan. Bake at 350 degrees for 20 minutes. Spread preserves evenly over crust. Sprinkle reserved pecan mixture over preserves. Bake an additional 30 minutes. (Check oven after 20 minutes - these should not be very brown.) Let set after removing from oven. Cut into bars while warm. Yields dozen.
