Carribbean Chicken

Ingredients

    1.5 lb chicken thights cut to 1" cubes
    3 bell peppers (I used red, orange and yellow) chopped
    1 onion chopped
    6 tsp minced garlic
    1 tbsp ground ginger
    1 can coconut milk
    1/4 cup chopped cilantro
    1/4 cup lime juice
    2 mangos diced
    2.5 tbsp olive oil

Directions

Heat oil in skillet. Add bell peppers and onions. Cook approx 5 minutes. Add chicken, garlic and ginger. Brown chicken. Add mangos, coconut milk, lime juice. Cook 10-12 minutes. Add cilantro before serving.
