Lentil Cauliflower Turkey soup

Introduction

Ingredients

    2 T olive oil
    1 turkey thigh (bone in, skin on)
    2 T Lipton onion soup mix
    4 c potato water, plus 4 c water
    4 c cauliflower
    1.5 c lentils
    2 c onions, chopped
    1 can kidney beans
    1 can Del Monte green beans
    1 pkg wing sauce (from Schneider's chicken wings - mild)

Tips

The turkey broth adds a lot of flavour, it's worth doing.


Directions

In frypan: brown turkey in oil, then add 2 c water and onion soup mix. Simmer until turkey is cooked. Pull out the turkey, pour the remainder into a small soup pot.

Take the meat off the turkey bone. Put the turkey bone and skin into the small soup pot. Simmer for a long time, then strain the broth into a large soup pot.

In the large soup pot, add the cauliflower. Cook until soft, then puree (my family doesn't like cauliflower). Add lentils, cook about 10 minutes. Saute the onions and add them. Add the canned beans and the wing sauce. Season to taste. Simmer together about 20 minutes.

Serving Size: makes 25 scoops of 1/2-cup each
