Veggie Eggs

Introduction

Great way to fit vegetables into breakfast! Great way to fit vegetables into breakfast!
Number of Servings: 1

Ingredients

    2 large fresh eggs, scrambled
    1/2 cup Kroger mixed bell peppers and onion mix (frozen)
    a few fresh mushroom slices
    1 tbsp EV olive oil

Tips

You can also cook the eggs in a second pan separate from the veggies and mix them together at the end.


Directions

Put olive oil in non-stick skillet on medium high heat. When oil is hot, add pepper and onion mix. Cook about 1 minute then add mushrooms. Cook another 2-3 minutes, then turn down heat to medium and add scrambled eggs. Toss and cook eggs to desired doneness. Plate and eat.
