1 tbsp. Flax Meal
Baking Soda, .25 tsp
*Egg white, 2 serving
Olive Oil, 1 tsp.
*Splenda No Calorie Sweetener, 1 tsp
The same batter also makes a delightful muffin. Just pour batter in a cup & microwave for 1 - 2 minutes.
I like to add 1/2 tbsp, or less, of FF sour cream & top with sugar free preserves.

This is also good for Phase 1 of the South Beach Diet--I just use two eggs instead of the egg whites, but then again, I don't really like egg whites.
I also turn it until a cinnamon roll type thing by mixing low fat cream cheese (1 oz.), splenda packet and some cinnamon. - 1/4/09
I just made this. I used 2 eggs, and coconut oil and a touch of maple syrup instead of artificial sweetener. I liked it, was good, but reminded me more of an egg meal than pancake, but it was good. I had with sour cream and preserves, I used to do with pancakes. I will make this again, satisfying. - 1/11/13
