Vegan Chik'n (Chicken) Cacciatore

Introduction

A delicious vegan version of the classic that is quick and simple to make! A delicious vegan version of the classic that is quick and simple to make!
Number of Servings: 4

Ingredients

    1 package of vegan chik'n strips (I use Morningstar Farms)
    2 cups chopped mushrooms
    1 medium diced onion
    1 medium carrot shredded
    2 cloves minced garlic
    1 tablespoon extra virgin olive oil
    1 to 2 cups seasoned tomato sauce, depending on desired thickness (I use a vegan variety of Newman's Own)
    1 - 10 oz package of spinach, or any other veggies you choose
    Water

Tips

Serve over pasta, rice, mashed potatoes or polenta!


Directions

1. In large pan, sauté mushrooms, onions, garlic, carrots, and Chik'n strips in olive oil over medium heat until onions are translucent and mushrooms & carrots are soft, approximately 10 minutes.
2. I use spinach in this recipe, and I add it once the onions, mushrooms, Chik'n, mixture has been cooking for 5 to 7 minutes, stirring in 1 handful of spinach at a time until the spinach is thoroughly wilted, then adding in the next handful. If you use a veggie like broccoli -- which would be great as well -- you would want to add it at the beginning of the cooking process.
3. Pour in the seasoned tomato sauce and reduce heat to low. You want the consistency to be a "thin stew", or thicker to preference. (I normally add in about 1.5 cups of sauce). If the mixture is too thick, add water.
4. Simmer for about 10 minutes, covered or uncovered depending on whether you want to steam the veggies more (then cover), or cook off some liquid (leave uncovered).
5. Remove from heat and serve over rice, pasta, mashed potatoes or polenta!
