Yummy kale with gratin sauce and bacon! This was inspired by Rachel Ray's dish, but I replaced the cream with fat free half and half, and the pancetta with bacon. Ingredients

6 cup chopped kale
Salt to taste
3 slices bacon, cut into 1/4 inch pieces
1 cup fat free half and half
2 cloves garlic
1/8 tsp nutmeg
Black pepper to taste
1/2 cup bread crumbs
2 tbsp olive oil, split

Directions
Preheat broiler. Boil a pot of water and add the kale for approximately 5 minutes. Drain and dry. Add 1 tbsp olive oil to a pan and crisp bacon. Add the half and half and garlic to the bacon, then add the salt, pepper and nutmeg. Reduce to 1/2 or 2/3 cup. Put the greens in the pan to coat and then transfer to a casserole dish. Toss breadcrumbs, parmesan and remaining 1 tbsp of oil. Sprinkle the mixture over the top of the casserole and broil two racks down to brown breadcrumbs and cheese, approximately 5 minutes.
