3 Ripe Mangoes Diced
3/4 c Raw scallions Chopped White and light green parts only
2 Cans of Reduced Sodium Black Beans rinsed and drained
Juice of 1 1/2 limes
1 1/2 Tablespoons Extra Virgin Olive Oil
Salt and Pepper to taste (about a tsp. of each)
Do not use over ripe mangoes the acidity of the lime juice will break down the fruit to a mush.
