Introduction

I make this for Thanksgiving and everyone RAVES about it. You can use any root vegetable you like. In fact, I like to use one of everything in that section for variety. Number of Servings: 8

Ingredients

    1 Large Butternut Squash, cubed
    1 Acorn Squash, cubed
    2 Sweet Potatoes, cubed
    2 Parsnips, cubed
    1 Medium Onion, diced
    2 Cloves Garlic, minced
    2 tsp Sea Salt
    1 stick unsalted Butter
    2 Tbsp White Balsamic Vinegar
    1/3 Cup Craisins
    Rosemary, Herbs de Provence, Pepper to taste

Directions

Peel, core, and cube the root vegetables. Dice/Mince the garlic and onion. Layer everything in a slow-cooker. Cook on HIGH for 3 hours. Enjoy!
