1 cup vegan butter
1 cup brown sugar
2 tsp pure vanilla extract
6 tbsp unsweetened almond milk
1 tsp vinegar (added to milk and curdled)
Pinch of salt
1/2 tsp baking soda
2 1/2 cups unbleached flour
white sugar for topping (optional)
Add flour, salt, and baking soda. Beat until mixed.
Place on cookie sheet covered with parchment paper and sprinkle sugar on top. Bake for about fifteen minutes.
Serving Size: makes about 27 cookies
