Oven Fried Trout

Ingredients

    2 whole trout
    2 TBl allpurpose flour
    2 tbl yellow corn meal
    2 dashes black pepper
    1 tsp. cayenne pepper
    2 tsp, garlic salt
    1 tsp. cardamon
    1 Tbl. ground sage
    1 Tbl. olive oil

Directions

Set oven to 350 F.
Scrape all scales from fish skin and fins under cold water.
Mix all dry ingredients in 1 gallon plastic bag.
Coat each fish inside and out in bag.
Heat olive oil in large frying pan.
Fry each fish on both sides until just browned.
Spray baking dish with Pam.
Transfer fish to baking dish and cook for 20 minutes.

Serving Size: Prepares 2 servings of one trout each
