Lentil soup with coconut milk and ginger (serving=2 cup)

Ingredients

    4 yellow onions, chopped
    4 cloves of garlic, pressed
    1 1/4 t red chilli pepper flakes
    6 t grated ginger
    4 T coconut oil
    2 28 oz cans crushed tomatoes
    2 14 oz cans coconut milk light
    4 cinnamon sticks
    1 t ground cardamom
    4 t turmeric
    2 1/2 c dried red lentils
    260 gr apx swiss chard or other greens
    6 c apx H2O or stock


Directions

Heat up coconut oil and saute onion, garlic, chili, and ginger until everything is soft. Add crushed tomatoes, and coconut milk. Add the spices, red lentils and stock or water. After a bit, add sliced up greens.


Serving Size: makes 9 2-cup servings
