Coconut brownies

Introduction

I adapted this from the "best brownies" recipe on Hershey's website, making it more friendly for those with glycemic issues.

Number of Servings: 16

Ingredients

    1/2 cup butter
    2/3 cup brown rice syrup
    1/3 cup sucanat
    2 eggs
    1/2 teaspoon coconut extract
    1 teaspoon vanilla

    1/4 cup whole wheat flour
    1/4 cup white flour
    1/3 cup unsweetened cocoa powder
    1/4 teaspoon baking powder
    1/4 teaspoon salt

    1/2 cup unsweetened coconut
    1/2 cup organic chocolate chips (I like Sunspire)

Tips

Because the brown rice syrup adds more liquid than you usually see in brownie batter, keep a close eye on it as it bakes. It may need a couple extra minutes in the oven.


Directions

Preheat oven to 350.

Beat the butter and sweeteners together and add the eggs. Add the rest of the wet ingredients.

In a separate bowl, sift together the flours, baking powder, cocoa powder, and salt. Add to the wet ingredients in installments, stirring thoroughly each time. In a final flourish, add the coconut and chocolate chips. Be sure to sing "ta-da!" as you do - it'll taste better.

Bake 20-25 minutes.

Serving Size: makes 16 1/2 cup servings
