3 cups fresh ground white wheat flour (or whole wheat pastry flour) 1 cup white flour 3/4 cup water 3/4 cup milk (fat free) 1/4 cup honey 3 Tsp oil 2 tsp yeast 1 1/2 tsp salt
Mix flours and add one cup to mixer (or you can do it all by hand) with the yeast. In a microwave safe bowl, add all wet ingredients and salt and bring up to 120*. Add to flour and yeast. Then knead. Add rest of flour until dough is elastic (you may not need all the flour). Let rise for an hour. Shape into loaf and let rise in loaf pan for about 45 minutes. Cook for 40 minutes at 350. Dump bread out of pan and let cool completely before slicing.
