Creme Brulee


Number of Servings: 4


    Coconut Milk, 1.5 cup (remove)
    Egg, fresh, 1 large (remove)
    Egg Yolk, 5 large (remove)
    Honey, .25 cup (remove)
    Vanilla Extract, 2 tsp (remove)
    Coconut Sugar, 6 tsp (remove)


mix all ingredients in a bowl and put into 4 ramekins or other small oven safe dishes. Place small dishes in a larger baking dish that you can pour boiling water into. Water should come about 1/2 way up the crème brulee dishes. (tip, put the larger dish in the oven on the rack. Pour a little water in and then put in your brulee dishes. Then pour the rest of the water in and carefully slide the rack into the oven) Bake @ 325 for 30-40 min until just set in the center.

Allow to cool on a wire rack then cover and chill for at least 1 hour or overnight. Before serving sprinkle with sugar and put the brulee under the broiler (top rack in the highest position) or melt sugar with a kitchen torch. Watch carefully as they burn quickly once the sugar starts to melt. If you use the broiler you may want to chill your crème brulee a bit before serving. The crème will be soft from being heated. Still yummy even if you can't wait. Also note the more sugar you put on the top of each dish the more of a crunchy top you will have.
