Roasted Zucchini ,mushrooms, and bell pepper

Ingredients

    Garlic powder, 1 tsp

    Pepper, black, 1 tsp

    Salt, .25 tsp

    Pepper, red or cayenne, .25 tsp

    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 0.50 tsp

    Parsley, dried, 1 tbsp

    Green Peppers (bell peppers), 0.5 cup, chopped

    Mushrooms, fresh, 3 small

    Onions, raw, .75 cup, chopped

    Garlic, 2 cloves

    Olive Oil, 2 1tsp

    *Summer Squash, 2 large

Directions

Preheat oven to 450 degrees

Grease roasting pan with olive oil

Chop squash, mushrooms, onions, bell pepper, and garlic and put into large bowl.

Drizzle olive oil over squash. Mix with a large spoon until everything is evenly coated.

Sprinkle garlic powder, salt, pepper and other spices over veggies. Mix with a large spoon until everything is evenly coated.

Pour mix onto roasting pan and spread it out until it evenly covers the pan.

Bake 15-20 minutes stirring once until cooked through.
