Ingredients

1 pound chicken thighs, boneless/skinless
2 medium potatoes, diced
2 carrots, chopped
1 onion, chopped
6 cloves garlic, mashed
1 can diced tomatoes and liquid
1 chicken bouillon cube
6 cups water
1 tsp. salt
1/2 tsp. pepper
juice of one lime
2 Tbsp. chopped parsley or cilantro
1 c. white long grain rice

Directions
Combine first 10 ingredients in pot. Cook until chicken is well done and starting to fall apart.
Add lime juice, parsley/cilantro, and rice. Stir, bring to simmer, and turn off heat.
Let sit 15 minutes or until rice is soft.
