Quinoa (Mediterranean)

Introduction

Number of Servings: 2

Ingredients

    1/2 Cup Quinoa
    4 oz. low-fat Feta, crumbled
    1/2 Cup Chopped Roasted Red Peppers
    1/2 Cup Mint Leaves, fresh and minced
    1 T olive oil
    t Pepper

Tips

This also makes a great side dish. As a side, this would probably serve 6 people.

If you can buy "instant" quinoa, you'll cut your cooking time in half.


Directions

Boil the quinoa. Let it cool. Fold in the feta, red peppers, mint, olive oil, and pepper.

Serving Size: Makes 2 (1 1/4 cup) Servings
