1/2 Cup Quinoa
4 oz. low-fat Feta, crumbled
1/2 Cup Chopped Roasted Red Peppers
1/2 Cup Mint Leaves, fresh and minced
1 T olive oil
This also makes a great side dish. As a side, this would probably serve 6 people.
If you can buy "instant" quinoa, you'll cut your cooking time in half.
Serving Size: Makes 2 (1 1/4 cup) Servings
