Quinoa (Pistachio)

Introduction

Adapted from a Real Simple recipe (the original used couscous). Adapted from a Real Simple recipe (the original used couscous).
Number of Servings: 6

Ingredients

    1/2 Cup Quinoa
    2 Carrots, grated
    3 Cups Baby Spinach
    1/4 Cup Chopped, Roasted Pistachios, unsalted
    1 T olive oil
    Black Pepper to taste

Directions

Boil the quinoa. Grate the carrots and chop the pistachios. While the quinoa is still warm, fold in the carrots, spinach, pistachios, olive oil, and pepper. Enjoy!
