Quinoa (Mexican)

Introduction

Adapted from a Real Simple recipe (the original used couscous) Adapted from a Real Simple recipe (the original used couscous)
Number of Servings: 2

Ingredients

    1/2 Cup Quinoa
    1 15.5-ounce Can Kidney Beans, rinsed
    1 Avocado, cut into bite-sized pieces
    4 Large Scallions, sliced
    2 T Fresh Lime Juice
    2 t Olive Oil
    Pepper to Taste

Tips

Could also be used as a side dish for approximately 6 people.


Directions

Boil the quinoa. While the quinoa is cooking: rinse the beans, cube the avocado, slice the scallions, and squeeze the lime juice. Let the quinoa cool. Fold in the beans, avocado, scallions, lime juice, olive oil, and pepper.
