Hamburger Soup

Number of Servings: 6

Ingredients

    1 tsp. olive oil
    1/2 cup onions, diced
    1 clove garlic, minced
    1/2 cup celery, diced
    1 lbs ground beef
    1 can diced tomatoes
    1 can tomato sauce
    4 cups beef broth
    1 cup corn, frozen
    1/4 tsp. salt
    1/4 tsp. parsley
    1/4 tsp thyme
    1/4 tsp. oregano
    6 oz (1 1/2 cups) pasta, small size such as small shells or elbow

Directions

In a large pot add olive oil, onion and garlic, saute for about 2 minutes. Ad celery and sautee for about another minute.

Add ground beef and cook until no longer pink. Drain the oil out or cook until it evaporates.

Add diced tomatoes, tomato sauce, beef stock, corn and seasoning. Bring to a boil. Add pasta. Cook until pasta is done.

Optinoal: serve with a sprinkle of cheese
