This freezes well, so it makes a great workday lunch. This freezes well, so it makes a great workday lunch.
Number of Servings: 8


    16 oz. black beans, dry
    1/2 pound 85% lean ground beef, browned
    2 onions, diced
    2 bell peppers, diced
    2 14.5-oz. cans diced tomatoes

    2 Tbsp. purchased Chili Powder,
    -OR- make your own as follows:
    1 tsp. paprika
    1 tsp. cayenne
    1 tsp. oregano
    2 tsp. garlic powder or dried garlic (NOT garlic salt)
    2 tsp. cumin


Adjust spices to your taste. (I love to add chipotle flavored Tabasco and/or crushed red pepper.)

NOTE: Cooking time does not include pre-cooking the beans.


Cook the dried beans per package instructions until soft.
Brown ground beef and cook onions and bell peppers with the ground beef.
Then add rest of the ingredients and cook for a short time to blend the flavors.

Makes about 8 one-cup servings.
