Quinoa Khichadi

Ingredients

    *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup
    Peanuts, dry-roasted, .25 cup
    Granulated Sugar, 1 tsp
    Olive Oil, 2 1tsp
    Salt, 1 tsp
    Cilantro, raw, 3 tbsp
    Hot green pepper, 1 sliced
    Cumin, 1tsp

Directions

Cook quinoa in water according to the package directions. Let it cool and fluff it with a fork. Add salt, sugar, crushed peanuts and cilantro.
Heat oil in a pan and add cumin and green chiles. When cumin starts cracking add cooked quinoa mixture and stir well. Cover tight and on very low heat simmer for five minutes and serve warm. If you like sqeeze some fresh lemon juice.
