Introduction

Ingredients

    Ingredients:

    2 tsp ground Cinnamon
    1/2 tsp Salt
    1 tsp Vanilla Extract
    1 1/2 cups raw grated carrots
    2 tsp Baking Powder
    1 tsp Baking Soda
    3 large egg whites
    SOY PROTEIN POWDER, 15 tbsp (remove)
    3/4 cup Fiber 1 Original Cereal into flour
    3/4 cup fresh chopped apples
    4 tsp PSYLLIUM Husks
    1/2 cup Whole Wheat Flour
    3/4 cup packed Brown Sugar
    1 cup Oat Bran
    1 cup Original SILK Light Soy Milk

Tips

Soy Protein Powder and Psyllium Husks can be purchased at health food stores. Oat Bran can be found in most grocery stores or health food stores.

Directions

Mix flour, bran, sugar and dry ingredients together. Shred carrots and apples and add to dry ingredients. Mix well. Stir together milk, eggs and vanilla and stir this into batter until well moistened. Fill cupcake papers 3/4 full and bake at 350*F for 20 to 25 minutes.
Makes 24 muffins.

Freeze muffins in a ziplock bag. Pull one out each morning and it will be ready to eat 20 minutes later on your the way to work!
