For those of you who love (or at one point loved) that unhealthy, mayonnaise filled, spicy Mexican style corn, try this healthier alternative. Eat cold or hot. Ingredients

1 Egg
2 Egg Whites
1 Cup Sweet Corn
1 tbs Mayonnaise
Cayenne Pepper to Taste
Tips
Eat rolled up in romaine lettuce or by itself. Eat either cool or warm (as the Mexican corn dish is served).
Directions
1.Preheat oven to 375*
2.Season the corn with the cayenne pepper, roast until it starts to darken
3.Hard Boil the eggs, cool under running water.
4.Peel eggs, discard 2 yolks
5.Smash eggs and whites. Add mayo and corn. Mix well. Season with cayenne to taste.
Serving Size: Makes one large serving (split up as you like)
