Green Chili

Introduction

Ingredients

    3 pounds pork shoulder and tenderloin combined cut into 1 1/2 inch pieces
    1 tsp salt
    1 tsp black pepper
    1/2 cup flour
    6 tablespoons canola oil
    2 large onions, diced
    8 cloves of garlic, minced
    2 pounds tomatillos, husked, rinsed, cored, quartered
    1 tablespoon ground cumin
    1 tablespoon dried oregano
    1 cinammon stick
    1 12 ounce bottle of beer
    2 cups chicken stock
    2 yellow bell peppers, diced into one inch pieces
    6 peppers (pablano, anaheim, pasillo, jalapeno, or mixed) cut into 1 inch dice
    3/4 cup cilantro, minced
    2 teaspoons orange zest

Directions

Mix pork with flour and salt and pepper. Add oil to deep Dutch oven and heat. Add meat in batches and cook until browned. Remove to bowl. Add onions and sautee until softened about 4 minutes. Add garlic and stir until fragrant, about 60 seconds. Add tomatillos and spices, beer and chicken stock. Bring to boil. Turn to simmer and cook, partially covered, for 2 hours. Add peppers and simmer another 45 minutes. Add cilantro and orange zest and stir until heated through. Serve in bowls with shredded cheese or in tortillas as burritos.
