Polynesian Chicken

Number of Servings: 4

Ingredients

    2 1/2 pounds chicken breast cut up in strips
    one 14 oz can crushed pinapple in juice
    1 small (12 oz) jar Apricot preserves

Directions

Preheat oven to 400. Spray rectangular baking pan with non-stick spray. Arrange the chicken strips in pan and spray them lightly with non-stick spray. Bake uncovered for 30 minutes, turn and bake for additional 15 - 20 minutes or until tender. Drain any juice from pan.

Mix the pineapple (With the juice) and preserves. Pour over the drained chicken and bake for 15 - 20 minutes until hot and bubbly.

Makes 4 servings.
