Vegan Baked Dijon Chik'n (Chicken) Strips

Introduction

A quick and tasty vegan supper main dish! A quick and tasty vegan supper main dish!

Ingredients

    1 package vegan chicken substitute (I use Morningstar Farm Chik'n Strips -- no need to defrost before cooking)
    2 cloves garlic, minced
    2 tablespoons maple syrup
    2 tablespoons balsamic vinegar
    2 tablespoons Dijon mustard
    Salt & pepper to taste

Tips

You can serve this with just about anything! We like to stick some veggies in the oven to roast at the same time -- asparagus, broccoli, potatoes, etc!


Directions

1. Preheat oven to 350 degrees. Line cookie/ baking sheet with aluminum foil, then spray that foil with cooking spray to prevent sticking. (If you prefer, you can use a baking dish to cook with, spray dish as well).
2. In a bowl, combine garlic, maple syrup, balsamic vinegar, and Dijon mustard. Stir until well mixed and a sauce is formed. Add salt and pepper to taste.
3. Mix in chik'n strips. Stir until chik'n strips are thoroughly coated with sauce mixture.
4. Fold edges of foil coated with cooking spray to form a "bowl". Pour chik'n strips and sauce into "bowl".
5. Bake in oven at 350 degrees, approximately 17 to 20 minutes or until chik'n strips are completely cooked and done.
6. Serve and enjoy!
