Poached Salmon

Introduction

Mom's (Easy and Elegant) Poached Salmon Recipe Mom's (Easy and Elegant) Poached Salmon Recipe
Number of Servings: 6

Ingredients

    2 cup Dry White Wine
    2 cup Water
    2 tbsp Rice Wine Vinegar
    1 tsp Salt
    10 Black Peppercorns
    10 Coriander Seeds
    2 Whole Cloves
    1 Bay Leaf
    1 Clove of Garlic
    Parsley, thyme or tarragon (sprig or 1/2 tsp dried)

    6 - 4 oz. salmon fillets with skin

Tips

Serve hot or chilled with a mayonnaise, cucumber, dill and chive sauce (add whipped cream if preparing for a special occasion).

Can be served with twice baked potatoes, peas & mushrooms, green beans & almonds and poached pears.


Directions

Combine and bring to boil uncovered over high heat in large skillet
Reduce heat and simmer for 5 minutes

While simmering wash and pat dry steaks

Insert into liquid skin side down
Cook 8 minutes
Check for 'doneness' - flesh still clings and fish slightly transluscent
