Blackberry Balsamic Pork

Number of Servings: 4

Ingredients

    1 pound pork tenderloin, cut into 1/2-3/4 inch slices
    1 cup chopped onions
    1 cup blackberries
    1/2 cup dry red wine
    1/2 cup balsamic vinegar
    2 tablespoons cornstarch

Directions

Sear the slices of pork in a hot skillet. Remove from the pan and set aside. In the same skillet, cook the onions until they are tender. Add the blackberries to the skillet. Whisk the cornstarch into the wine and balsamic vinegar, pour into the skillet. Let the liquids come to a boil, then reduce heat and add the pork back into the pan. Cook the pork for a few more minutes on each side, or until the pork is just barely pink in the middle.

Serving Size: Makes four servings
