Number of Servings: 2

Ingredients

    3 large eggs, beaten
    2 oz chopped onion
    2 med. mushrooms, chopped
    2 T. olive oil (may use less - will cut calories)
    1 tsp powdered garlic
    1 T dried parsley
    .5 tsp dried oregano
    1/2 cup Tillamook 4 cheese Mexican blend

Directions

Saute onion and mushroom in oil until onion is just tender. Add herbs and cook 1 minute more. Pour beaten egg over. Can cook as a scramble or omelete at this point. Add cheese when the eggs is just set. Cook until egg is completely set and cheese is melted.

Serving Size: Makes 2 servings
