Sweet potato, 1 about 5" long, cubed
1 Red Onion large cut in chunks
3 Carrots medium size, julienned
1 cup sweet corn
2 Tablespoons Light Olive Oil
1/2 teaspoon Curry powder
1/2 teaspoon Chili powder
1 cup Broccoli,chopped
1 green pepper, chopped
6 Vita's Low Carb Tortilla, 7" Whole Wheat Low Carb Tortilla (or similar)
Bake in oven 30 mins or until vegetables are tender. Stir occasionally to prevent sticking.
Warm foil-wrapped tortillas in oven .
Fill each tortilla with 1/6 of the veggie mixture. Add salsa, non fat sour cream and beans as desired.
