Sweet Potato Shepherds Pie

Ingredients

Ground beef, extra lean, 32 oz (remove)
2x8oz can Green Beans (snap), 454 grams
2x8oz can sliced Carrots
1x8oz can baby Peas, canned, 455 grams
Cauliflower, raw, 1 head, medium (5-6" dia)
4 medium Sweet potato (softened, mashed)
Onions, raw, 1 large
Maple Syrup, 2 tbsp
Salt, 1 tbsp
Butter, LIGHTLY salted, 4 tbsp
Coconut Oil, 2 tbsp
Parsley, dried, 1 tbsp
Pepper, black, 2 tsp
Cloves, ground, 1/8 tsp
Oregano, ground, 1 tbsp
Milk, 3.25%, .5 cup

Directions
Open and drain cans vegetables and set aside. If using fresh vegetables, partially cook to soften.
1 Tbl coconut oil, soften fry sliced onion until translucent and set aside. 1 Tbl coconut oil, Brown fry 2 lbs 10% extra lean ground beef, set aside. Chop 1 head cauliflower, steam 10 minutes, add to blender or food processor with 1/4 cup milk, 1/8 tsp cloves, 1/8 tsp pepper, 1 tsp salt, 2 Tbl butter, process until smooth, set aside.
Mix meat, mashed cauliflower, and all vegetables prepared above with Oregano and additional salt and pepper.
Pour mix into 9x13x2 inch pan.
Partially cook, soften sweet potatoes, mash, blend with 2 Tbl maple syrup, 2 Tbl butter, 1/4 cup milk.
Cover above vegetable meat mixture with mashed sweet potato like icing. Sprinkle Parsley on top.
Heat the "shepherd's pie" through.
