Introduction

Number of Servings: 8

Ingredients

    1 1/2 cups canned evaporated milk
    1 tsp ground cinnamon
    1/2 tsp ground Ginger
    3 1/2 cups canned Pumpkin
    1/8 cup Granulated Sugar
    1/2 tsp cream of tartar
    3 Egg whites
    1 1/4 Tablespoon SOY PROTEIN POWDER

Directions

Preheat oven to 425 F.

Mix sugar and spices in a small bowl.

Beat eggs with cream of tartar in large bowl until stiff with peaks. Mix pumpkin, sugar and spice mixutre with protein powder until well blended. Slowly stir in evaporated milk. Fold egg whites into mixture and blend until smooth.
Bake at 375 F for 15 minutes, then turn down oven to 350. Bake for an additional 45-50 minutes or until knife inserted near center comes out clean. Cool for 2 hours and serve.
Cook in 8 individual oven proof ramkin dishes set in a cookie sheet with 1/2" water.
Store covered in frig.
