vegetarian chili with gimme lean

Ingredients

    1 can of kidney beans (drained)
    1 can of pink beans (drained)
    1 can of black beans (drained)
    1 can of tomato paste
    1 cup of chopped green pepper
    1/2 cup of chopped red pepper
    3/4 cup of chopped onion
    5.5 ounes of gimme lean
    5.5 cups of water
    1 tsp of chili powder
    2 tbsp of cumin
    salt
    1 tbsp of extra virgin olive oil


Directions

chop onions, red peppers, and green peppers. coat pot in olive oil and cook gimme lean. start to add peppers and then onions. let simmer. when onions and peppers are soft add the beans. next add the tomato paste. make sure tomato paste is distributed throughtout mixture. begin to add 5.5 cups of water (you can add more if you want a thinner broth or less if you want thicker.) put lid on pot and let simmer for 5 to 10 minutes. add all your spices to the chili. then let simmer for about 10 to 20 minutes. this should make about eight 1-cup servings
