Turkey Sloppy Joes a la Deceptively Delicious

Ingredients

    1 small onion (i used yellow)
    1 carrot, peeled and chopped
    1 clove garlic, chopped
    1 Tbsp. Olive Oil
    2 lbs ground turkey
    1 tsp chili powder
    1 Tbsp Worcestershire sauce
    1 small can tomato paste
    1 cup barbecue sauce (I used Montgomery Inn)
    1 Tbsp brown sugar (unpacked)
    1/2 tsp salt
    1/8 tsp ground black pepper
    1/2 cup pureed red pepper (core and chop into 2 in by 2 in pieces, then put into small microwaveable bowl with 2 Tbsp water, and cooke for 2 min, then place in food processer and puree for 1-2 min), freeze remaining pureed pepper for later use

Directions

Chop your veggies (carrots, garlic, and onion) and set aside. Prepare large skillet by coating with cooking spray, then heating on burner at medium heat for about 2 minutes. Add olive oil, then vegetables and cook until onions are soft, about 2 minutes. Use a wooden spoon to stir the vegetables to keep them from sticking to the pan.

Add ground turkey to vegetable mixture, and use wooden spoon to chop and stir in pan until meat is thoroughly cooked (approximately 4-5 minutes).

Once meat is cooked, add tomato paste, worcestershire sauce, barbecue sauce, chili powder, brown sugar, salt, and pepper to pan. Stire to combine all ingredients and cook until heated through. You may want to reduce the heat to low. Mixture will be very thick, add in several Tbsps water (2-3) to bring it to your desired thickness.

Serve on toasted wheat buns or bread.
