Beet and Orange Salad

Introduction

I got this recipe from "Dinner a Day" and served it at the Senior Center where I cooked...everyone loved it and the dietician asked for a copy to give to hospitals and nursing homes where she found it hard to get people to eat beets. Number of Servings: 4

Ingredients

    leaf lettuce to line plate or bowl
    2 large oranges, peeled and sliced
    1 15 oz. can sliced pickled beets, drained and rinsed
    Dressing:
    2 Tblsp. canola oil
    1 Tblsp. white wine vinegar
    1 Tblsp. orange juice
    1 tsp. honey
    1/8 tsp. nutmeg

Tips

You may want to use several beet slices between each orange slice.


Directions

Arrange lettuce leaves on plates; alternate beet and orange slices on top. Combine dressing ingredients and drizzle over the salads.
