Low Calorie Fudge Mousse Pie

Introduction

Every slice is rich and decadent---for 136 calories!!! You can spread it over any pie crust, but it's delicious all by itself. Gluten Free, Dairy Free, Grain Free, Sugar Free... does it get better than this?

Number of Servings: 8

Ingredients

    Morinu Tofu, Extra Firm, 2 boxes (about 24 oz total)
    Baker's Unsweetened Baking Chocolate, 3 oz
    Cocoa, dry powder, unsweetened, 1 cup
    Taster's Choice Instant Coffee, granules, 3 tsp
    Vanilla Extract, 1 tbsp
    So Delicious Coconut milk, 1/4 cup
    Knox Gelatin packet, 2 serving
    Salt, 1/4 tsp
    NuNaturals NuStevia - about 20 packets, or 20 grams (sweeten to taste)

    Optional: peppermint flavoring if you like a minty fudge pie.

Tips

A Food processor and spring-form pan make this recipe a dream.

If you use a crust,have it already baked and simply spread mousse over crust and refrigerate.


Directions

Melt baking chocolate in microwave.

Add all ingredients to a large mixing bowl and blend with a handheld mixer----even better, if you have a food processor, add everything and blend until smooth.

Cover the bottom of a pan with wax paper (spring-form makes this easier).

Spread chocolate fudge mousse evenly in pan.

Refrigerate at least 2 hours. The longer you cool it, the better the texture is.

Serves 8.


Serving Size: Makes 1 8" springform pan
