Swedish flat bread

2 medium potatoes peeled, cubed and boiled in 2 cups water. Approx 2 cups potatoes.
1 tbsp salt
1.25 cups (.5 lb) lard. Do not substitute, it won't turn out. I tried, and it just doesn't cut it.
3 cups cream or half and half
2 pkg dry yeast
1 cup whole wheat flour
8-9 cups white flour.
Great fresh from the oven slathered with BUTTER, not fake stuff, and jam, jelly or honey. Great for dunking in coffee, hot chocolate, soup, stew, or with cheese and sausage. Can be frozen. Just pop in 1000 watt microwave for 8 sec to heat.
Cover with plastic wrap and allow to double in size.
Heat oven to 425F.
Cut chunks of dough to make a ball approx 1.5-2 inches in diameter. Should make approx 6 in circle of dough.Roll to approx 1/8 inch thick with rolling pin, then rolled with knobbed rolling pin. place on ungreased cookie sheet and bake until bottom starts to brown. Cooking longer will make for a crisper texture.
Serving Size: makes approx 60 6 in pieces. 150 calories, 19 grams of carbs.
