IntroductionSimple but tasty soup. Simple but tasty soup.
6 Cups kale, cleaned & chopped
1 Tbsp olive oil
1 medium onion, sliced thinly
3 Cups corn, frozen or canned
6 Cups vegetable broth
In a large pot over medium heat, put in olive oil & onions. Cook until translucent.
Add in corn,kale, & vegetable broth. Turn up heat & bring to a boil. Once it begins to boil, lower heat & simmer another 10-15 minutes.
Serving Size: Makes 3 3C servings
