Quest Bar Banana Nut Muffins

Introduction

Ingredients

    -1 very ripe medium large banana
    -1 1/4 c oats
    -1/2 container of lite vanilla greek yogurt
    -1 banana nut Quest Bar
    -1 egg white
    -1/4 c splenda
    -1 tsp cinnamon
    -3/4 tsp baking powder
    -1/4 tsp baking soda

Tips

**You can buy the banana nut Quest bars at questproteinbar.com. They are my favorite protein bars EVER. However, if you can't buy Quest bars, you can add in 170 calories of real nuts instead, or substitute 170 calories of protein powder. Or if you prefer, you can leave out the Quest bar/nuts all together and it will take the muffins down to 95 calories each!


Directions

Pre-heat oven to 400 degrees. In a blender, mix 1 cup of oats, 1 banana, 1 egg white, 1/2 a container of vanilla greek yogurt, 1/4 cup splenda, 1 tsp cinnamon, 3/4 tsp baking powder, and 1/4 tsp baking soda. Mixture will be thick, so you may add 2-3 tbsp unsweetened almond milk. Once the mixture is well blended, pour into a mixing bowl, set aside. Chop up 1 banana nut Quest Bar and pour into bowl of batter. Add your remaining 1/4 c of oats to the bowl as well. Stir well. Pour batter into 6 cup muffin pan. (It works best to spray pan with cooking spray or to use a silicone pan. Since there is no flour, these tend to stick to cup liners.) Bake in the oven for 20 minutes.
